Korean vermicelli and tofu chige
Heita Korean vermicelli made from sweet potato flour.
The glutinous texture is combined with tofu, iidako (octopus), and vegetables, and slowly simmered in crab broth.
The aroma of the broth rises with the steam.
Each bite is layered with the flavor of the ingredients, leaving you with a pleasant sense of satisfaction as you continue to eat.
It can be served after barbecued meat or as a closing dish.
This is a winter-only chige that accompanies the evening in Jiyugaoka.
